One of my favorite things to have on hand is homemade hummus. I will make this starting with the dried beans whenever possible. This helps lower the cost of making it and reduces the amount of packing that is being used and then discarded. It also allows me to know exactly what is in the food I am eating. I like to try to monitor the amount of sodium that I take in whenever possible. Since I currently live in a very hot and humid climate I store my dried beans in the freezer to help them stay fresh longer.

I make my hummus weekly to keep it fresh and tasty. I start with 100g of dried bean in which I let soak all day, then cook until soft. I will then put all of the ingredients in my food processor and in less than 10 minutes I have 4 servings of hummus.

Both recipes are wonderful with your favorite raw veggies and crackers. I regularly enjoy them as a snack or lunch at work, going on hikes, picnics, the beach (which is often where my picnics are located).

Original Hummus Recipe

100 grams dried chickpeas to soak in water until rehydrated and then cooked until soft.

If you do not have time for this, then 225 gram bag or can of beans works well. Be sure to drain and rinse off the beans before putting in the food processor.

2.5cc Fresh or Powdered Garlic (I usually use powdered to have a more mellow flavor and not to have garlic breath while at work :))

30ml Olive Oil

15ml Lemon juice

15ml Tahini

2.5cc Cumin

2.5cc Smoked Paprika

2.5cc Pink Himalayan Salt (or for a Greek twist 5 Kalamata Olives and 10 Spanish Olives)

Then add small amounts of water until desired smoothness.

I also enjoy the sweetness and the beautiful fuchsia color that Beet Hummus has to offer as a change of pace.

Beet Hummus Recipe

Small Lemon, zested

15ml Tahini

30ml Olive Oil
