Foods I have been eating to try to eat healthy and not eating meat.
- Papaya, Mango, watermelon, frozen banana and berries, broccoli,
- Almond, peanut, soy bean, and sun butter
- Seed breads and crackers
- Soy Milk or Almond Milk
- Favorite add ins for my Chia Seed Pudding and Overnight Oats: Dried cranberries – Almonds – Blueberries – Strawberries – Raspberries
- Hummus w/ carrot, tomato, cucumber, pita bread, and pretzels
- Nut butter and jam or fresh fruit sandwich
Black and Red Kidney Bean Mexican Bowl
Dried Black and Red Kidney Beans equal portions and let soak at least overnight up to two days. With periodic rinsing when you are home.
Put fresh water and beans in the pot with fresh made or fresh store bought salsa, I prefer the non-jarred salsas in the deli section of the store and water, and let all of that cook over low heat until the beans are soft. Another option if you don’t have salsa of any kind is to use a packaged or homemade Mexican seasoning blend. I like to make batches of seasoning blend so that I have it available when I am wanting to add a little Mexican flavor to my food.
Once cooked, add black olives and Vegan cheese. I like to mix everything together so that the cheese is nicely melted in, especially since vegan cheese seems to take a bit longer to melt nicely.
Then eat with either chips, tortillas, or with a spoon like a chili.
